Perfect Summer Pizza

Anyone else ever get bored with eating the same old thing all the time? My favorite way to mix up what’s on my plate is to pick ingredients that are seasonal. (Farmers’ Markets for the win, y’all.) Even if you don’t have access to a great farmers’ market you can get fresh seasonal fruits and veggies at your local grocers, too!

This week was a treat yo self week at my house after a couple of wild and crazy weeks in the rearview mirror. My favorite way to treat myself is in the kitchen (because the way to my heart is through my stomach). So this week I picked up the prettiest peaches and fresh arugula.

Here’s the thing though, this vegetarian is not big on salads, like, at all. So I picked up some other ingredients, too…

This week I was all about the fresh and summery as well as the little bits of comfort food. And that’s where my summer pizza inspo came from.

It all starts with the dough. And because I’m a busy lady I save myself all the trouble and time by picking up Garlic and Herb Pizza Dough from Trader Joe’s.

I spread on pesto sauce (basil is a seasonal flavor but I went to three grocery stores and everyone was sold out so pesto sauce was my easy substitute).

Sprinkle on some goat cheese. I’m a total sucker for chevre with honey, it’s got that perfect balance of sweet and tangy.

Pop that in the oven for 8 minutes then top the pizza with my arugula, sliced peaches, and more cheese!

It’s a little slice of summer heaven!
