Watermelon, Tomato, and Feta Salad

The first time I ever had watermelon and tomato together was ages ago and I ordered it because it was the only thing on that (admittedly limited) menu I could eat. It didn’t sound appealing but I was hungry enough to give it a chance. When it arrived at my table it was an appetizer sized plate with chunks of buffalo tomato and watermelon. That was it. To say I wasn’t impressed would be an understatement. Y’all. I kid you not, I scraped every last bit off my plate that night, wishing I’d thought to order more. It was that good.

Since then I’ve played around quite a bit with the unexpectedly fantastic combo of watermelon and tomato and this salad is the best combination I’ve found so far.

Time: 10 minutes

Ingredients:

1 handful of Fresh Basil

1 tsp Balsamic Vinegar

1 cup Watermelon

1 cup Feta (I use VioLife’s Just Like Feta)

1 cup Buffalo Tomato

Directions:

Dice up your feta, watermelon, and buffalo tomato into 1/2 inch cubes. The cubes can be slightly bigger or smaller but try to make sure they’re all the same size! Shred the basil, you can use a knife if you prefer finer slices but it’s just as yummy if you shred it with your hands! Toss them in a bowl with the balsamic vinegar.

Serve with a chilled glass of rosé that has notes of strawberry and watermelon ( I recommend MERF 2019 Rosé).

That’s it, it’s really that easy!
